When buying fresh okra, look for young pods free of bruises. Make sure it is tender but not soft, and not more than 4 inches.

 

You can find garam masala at Indian grocery stores or in some specialty stores, like Trader Joe’s

What is a malanga?

A malanga is much like a potato--it has a fuzzy brown skin and nutty, bland flavor, which makes it excellent for balancing out spices.

Quick Vegetarian Recipes

We’re all on-the-go most of the time. But in our hurries, we shouldn’t have to sacrifice our South Asian Cuisine! Neetika Singh of Maryland has provided us with two vegetarian recipes that each take no longer than 30 minutes to prepare!

Masala Okra

Ingredients

8 oz large fresh okra

1 tsp salt

1/2 tsp black pepper (ground)

1 tsp garam masala

1/4 tsp turmeric powder

1/4 tsp red chili powder

1 fresh tomato

1 tbs corn oil

 

1. Wash the okra and trim off the sides.

2. Dry the okra with a paper towel.

3. In a small plate, mix the salt, black pepper, garam masala, turmeric powder, and chili powder.

4. Fill a skillet with the corn oil on low heat.

5. Fry the okra with the spices maintaining low heat until the okra is done. You can tell that the dish is done when you can are able to stick a knife into the okra and cut into it.

6. Add small slices of fresh tomato and serve with yogurt.

 

Bombay Malanga

Ingredients

5 oz fresh malanga

1 tsp salt

1/4 tsp. black ground pepper

1/4th tsp lemon pepper

1/4 tsp chat masala

1 fresh small green chili, diced

Ground basil leaves

½ fresh, diced tomato

1 tbs. lemon juice

 

1. Wash the fresh malanga under running water for a couple minutes. Dry it with a towel paper.

2. Microwave the malanga for 4 to 5 minutes until done well. You will know it’s done if you can stick a knife in the malanga easily.

3. Cool under cold, running water.

4. Peel and cut the malanga into small serving pieces.

5. Place the malanga into a serving dish and add salt, pepper, lemon pepper, chat masala, diced green chili, basil leaves, tomatoes, and lemon juice.

7. Serve on a hot day with lemonade.
