Dad's Simple Recipes for Grilling

Dads, take note. Here are some simple, yet delicious grilled recipes that you can follow to surprise the whole family!

 

Catfish

Ingredients

2 lbs. Catfish

To Marinate
75 grams Shan Lahori Fish Masala Mix
½ cup water
4 tablespoons lemon juice
2 teaspoons virgin olive oil


Instructions

1) Mix all ingredients and apply evenly on catfish. Marinate for 2 hours.

2) We will cook the catfish using indirect heat. You can accomplish indirect heat on a gas grill by heating up the two outside burners, and cooking the catfish over the middle, unlit burner. If you’re limited to one burner, you can spray aluminum foil with non-stick cooking spray and place the catfish within that. If you’re using charcoals, place the coals to the sides of the grill, and cook the catfish in the middle.

3) Pre-heat the grill to medium heat. Spray non-stick cooking spray on the grill.

4) Place the catfish on indirect heat for 15 minutes.

5) Turn it over and cook for another 15 minutes. (Be sure to check often, as this dish can easily burn!)

6) When the meat thermometer reads 150 degrees Fahrenheit, the dish is done.



Grilled Chicken

Ingredients

4 lbs. chicken drumsticks

To Marinate
1 tablespoon garlic paste
1 tablespoon ginger paste
8 tablespoons lemon juice
3 teaspoons virgin olive oil
50 grams Shan Chicken Tikka Masala Mix

Instructions

1. Mix all ingredients and apply evenly on chicken pieces. Marinate for 2 hours.

2. Pre-heat the grill to medium heat. Spray non-stick cooking spray on the grill.

3. Place chicken on the grill, directly on the burner. Close the grill.

4. After about 10-15 minutes or when the chicken has turned light brown, flip the chicken to the other side. Grill evenly until light brown (It should take 10-15 minutes on each side. To check if it is done, stick a meat thermometer into the chicken. It ought to read 180 degrees Fahrenheit).

Spicy Grilled Vegetables

Ingredients

1 part Original BBQ Sauce
3 parts Jamaican Jerk Sauce
1 cup squash
1 cup onion
1 cup mushrooms
1 cup red pepper
1 cup green pepper
1 cup yellow pepper
1 cup cherry tomatoes


Instructions

1) Cut the veggies into roughly equal slices.

2) Mix 1 part Original BBQ Sauce with 3 parts Jamaican Jerk Sauce. Mix with veggies and marinate for 2 hours.

3) Pre-heat the grill to low heat. Spray non-stick cooking spray in foil and place the veggies within.

4) Cover the grill. Grill for 10-15 minutes or until tender. Turn the veggies partway through.
